Duck breast with apple

Preparation
  1. Coat the duck breasts with honey and then season both sides generously with pepper. Dribble balsamic vinegar over the breasts and add the shallots. Cover and set aside for at least one hour.
  2. Peel and core the apples and remove the pips. Slice the apples and place in a non-stick frying pan. Sprinkle with lemon juice and add 15 g of cubed butter.
  3. Cook on a medium heat for 20 minutes, turning the apples from time to time. Once cooked, season with salt & pepper.
  4. Preheat the oven grill.
  5. Arrange the duck breasts in a baking dish with the marinade. Place the dish 15 cm below the grill and cook for 7 to 8 mins. Then turn the breasts and grill for another 7 mins.
  6. Garnish the plates with the cooked apples. Slice the duck breasts and lay them by the cooked apples together with their juices. Season with pepper and serve.
