Ingredients :
- 250 g mascarpone
- 2 eggs
- 50 g sugar
- 12 sponge fingers (or more according to the size of the dish)
- 450 g frozen red berries
- 2 cuillères à café tsp blackcurrant liqueur
Preparation :
- Defrost the red berries in a strainer over a mixing bowl.
- Separate the egg whites from the yolks. Whisk the yolks with the sugar until the sugar dissolves and the mixture whitens.
- Add the mascarpone to this mixture.
- Beat the eggs to stiff peaks and then delicately fold in the mascarpone mixture.
- Mix the melted red berry juice with the blackcurrant liqueur (more or less to taste).
- Dip the sponge fingers in this mixture and use them to line the bottom of a serving dish or individual verrines.
- Then add a layer of the mascarpone mixture and top it with the red berry mixture.
- Repeat the operation until you reach the top of the dish, then garnish with the defrosted red berries.
