Ports take on their colour and flavour intensity
through the wine-making process.

After the harvest, the grapes are pressed, macerated and fermented before the mutage step which brings Port its special organoleptic qualities.

During this critical step, the fermentation process is interrupted by adding eau-de-vie so that the wine maintains the natural sugar of the grapes. This process provides Port with a high alcohol content and a sweet taste.
