
CRUZ White
CRUZ White is a White Port with citrus notes. It may be enjoyed on the rocks or as part of a cocktail, and is the perfect accompaniment for almonds, fish and citrus fruits.

Ingredients :
- 500 g of red tuna fillet
- 2 eggs
- 3 tbsp premium olive oil
- 1 tbsp balsamic vinegar
- 2 tbsp lemon juice
- chives
- parsley
- 2 tbsp capers
- salt, pepper
Preparation :
- In a salad bowl, mix the olive oil, balsamic vinegar, citrus juice and herbs together. Season with salt and pepper.
- Slice the tuna fillet into small cubes with a very sharp (non-serrated) knife, then mix them with the sauce in the salad bowl.
- Shape the mixture into a small 2 cm cylinder on each plate. Chill in the refrigerator for one hour.
- To serve, top each tartare with an egg yolk and 1 tbsp of capers.
- Serve with a green salad such as lamb's lettuce or rocket.
