GRAN CRUZ aged for 10 years is an old Port with spicy and candied fruit notes which perfectly accompanies duck and traditional desserts.


Recipe Duck breast with apples

People : 2 Preparation :20 min Cooking time :20 min

Ingredients :

  • 2 fresh duck breasts
  • 1 tbsp balsamic vinegar
  • 2 tbsp liquid honey
  • 2 shallots
  • 4 Boskoop apples
  • 1 lemon
  • coarsely ground pepper and fine salt

Preparation :

  • Coat the duck breasts with honey, then pepper them generously on both sides. Then sprinkle balsamic vinegar over the duck breasts and add the shallots. Cover and reserve for at least one hour.
  • Peel, core and seed the apples. Slice the apples and place them in a non-stick pan. Sprinkle them with lemon juice and add 15 g of cubed butter.
  • Heat over medium heat for 20 min, turning the apples over from time to time. Season with salt and pepper once the apples are cooked.
  • Preheat the broiler of the oven.
  • Arrange the duck breasts in an oven dish with the marinade. Place the dish 15 cm under the broiler and cook for 7 to 8 min. Then turn the duck breasts over and cook for 7 additional minutes.
  • Arrange the cooked apples on the plates. Slice the duck breasts and place them on top of the apples, topping them with the cooking juices. Add a pinch of freshly ground pepper and serve.
