Recipe Cod fritters

People : 8 Preparation :1 hr Cooking time :1 hr

Ingredients :

  • 1 kg salt cod (or half this amount if already shredded)
  • 3 or 4 potatoes
  • 4 eggs
  • 6 heaping tbsp flour
  • 1/2 packet of baking powder
  • 2 onions
  • 1 bunch of flat parsley
  • 10 cl milk
  • olive oil
  • frying oil

Preparation :

  • The day before preparing, remove the salt from the cod by soaking it in water. The water should be changed approximately every 5 hours. Cook the cod for 10 minutes in a litre of milk mixed with a litre of water. Drain the cod and shred it with a fork, removing the skin and bones.
  • Cook the potatoes and crush them with the milk. Add the eggs one by one, incorporating each one before adding the next.
  • Chop and sauté the onions in olive oil, and add them to the mixture with finely chopped parsley. Sprinkle the yeast and flour and stir. Reserve for three to four hours, if possible, so that the batter can rise slightly.
  • To finish, heat oil in a deep fryer. Form small ovals of batter with two spoons and drop them into the oil. Careful, the oil must not be too hot; otherwise, the fritters will burn without cooking through.
